Fudgy Sweet Potato Brownies (vegan)
Kim and I at the Saddle on Siphon Draw trail. Superstition Mountain Flat Irons. It was a pretty sketchy hike to get here. We snacked on these delicious sweet potato brownies for energy.
Recipe Inspiration
My daughter and her wife are vegan, so I am always looking for a delicious vegan recipe that I can cook for them while I visit them in Arizona. This recipe was a success! Tasha even texted me for the recipe afterwards! SQUEAL!
Hiking in Superstition Mountain
I brought these brownies on a hiking trip on Siphon trail to Superstition Mountain saddle. I enjoyed this with my beautiful, artistic friend Kim from KimsGems. The rich browneies were the perfect snack with an orange as we sat and looked over the valley far below.
***Kim brought the juicy oranges that were grown in her yard.

Fudgy sweet potato brownie
RECIPE:
3 cups cooked and mashed sweet potatoes (this was 3 medium to large sized sweet potatoes for my recipe)
1 cup no sugar peanut butter
3/4 cup real maple sugar
1 cup cocoa powder (this is unsweetened)
1 1/2 cup oat flour
1 1/2 tsp baking soda
1 tsp salt
3/4 cups sugar free chocolate chips (if you buy dairy & sugar free then these are vegan)
Directions:
Preheat oven to 350°
Prepare 9 x 9 inch pan by lining with parchment paper. I cut two pieces 9 inches wide and cross them over the pan and up the sides
Mix dry ingredients. Add Sweet potatoes, maple syrup, and peanut butter.
Fold in chocolate chips
Bake for approximately 50 minutes. The parchment paper keeps the brownies from over browning. Keep testing them to look for firmness. I personally think these taste really good out of the fridge.
Fudgy, guilt-free desert or snack!
